Ever since I had my first bite of handmade not factory produced marshmallows at Jules Verne in Paris, I’ve always wanted to recreate that taste in the kitchen. I finally found time over the holidays to do this, mainly because I’ve been addicted to hot chocolate lately and the only thing better than hot chocolate when it’s snowing outside, is one with a homemade marshmallow on top!

These turned out to be fluffy, but not airy, and just the right amount of sweetness! (I always thought store bought marshmallows were a tad too sweet.)

The ones that didn’t end up in hot chocolate (or in my mouth) got coated with toasted coconut flakes and became small bundles of fluffy goodness for the holiday season. :)

My little bro turned 25 on Monday. So what did I do after making a wedding cake? Bake another cake of course! :)

His favourite mario character is Yoshi. I like Yoshi too. We used to fight to be Yoshi when we played Mario Kart together but I never knew Yoshi’s nose was so big! I actually had to wait for it to dry separately and then put it together because it was so heavy.
